<p><b>Ingredients:      <br /></b>2 Cups All-Purpose Flour     <br />4 Teaspoons Baking Powder     <br />1/2 Teaspoon Salt     <br />1/2 Cup Shortening     <br />1 Egg     <br />2/3 Cup Fat Free Milk     <br /><b>-</b>     <br /><b>Directions:</b>     <br />In a small bowl, combine the flour, baking powder and salt. Cut in shortening until the mixture resembles coarse crumbs. Whisk egg and milk; stir into dry ingredients just until moistened. Turn onto a well-floured surface; knead 20 times. Roll to a 1/2 inch thickness; cut with a floured biscuit cutter or a drinking glass. Place on a lightly greased baking sheet or cake pan. Bake at 450 degrees for 8-10 minutes or until golden brown.</p>
<p>Like I said in my <a href="http://erinstartsliving.wordpress.com/2010/03/25/breakfast-casserole/">last post</a> the husband has been craving breakfast for dinner. Along with the egg casserole, I went in the search for some great biscuits. I have wonderful memories from my childhood of my mom making biscuits every Sunday morning before church. My mom a huge cook but we always had a big Sunday breakfast. It was the only day that my whole family had breakfast together and I will always remember being in the best spirits on Sunday.</p>
<p>This recipe was great! Combined with a little butter and jelly, perfection! The husband didn&#8217;t have a lot of homemade biscuits growing up, so he was very pleased with the biscuits. He said that he would have preferred to have sausage and gravy with these biscuits, but I hate gravy so I don&#8217;t make that often. </p>
<p>This was my first time to make biscuits without my mom/ grandma present or out of a can. They were super easy and tasted so much better than biscuits out of a can. I would much rather take the extra time to get a fantastic biscuit. They were ready to pop in the oven before the oven was preheated. I can&#8217;t image making biscuits out of a can again unless I&#8217;m super crunched for time.</p>

<p>The husband has been wanting breakfast for dinner for the past few nights, so I changed the menu to include a random breakfast casserole. My parents didn’t make a lot of breakfast casseroles, but the husbands parents did. I made it off the top of my head and even though it is crazy simple, I was proud of myself.</p>
<p>6 eggs    <br />1/4 C milk    <br />3 oz. sour cream    <br />1/2 package bacon    <br />1/2 C shredded cheddar cheese    <br />Cook, cool and crumble the bacon. Preheat oven to 325. (These were the husbands jobs) In a medium bowl, combine the eggs, milk, salt and pepper. Heat a large skillet over medium heat. . Cook the eggs; stirring until eggs are done to you. Remove from the heat and allow eggs to cool. When cool, stir in the sour cream. Spread eggs evenly into a lightly greased 8 X 8&#160; glass baking dish.Top with crumbled bacon and then cheese.&#160; Bake for 15-20 minutes until hot and cheese is melted. </p>
<p>Although it was good and the husband ate it like there was no tomorrow, we probably wont make this for a while. I have a thing with all my food touching. I like to get just eggs or just bacon. I’m also not a huge fan of cheese on my eggs, so that was a little bit of a turn off for me. At least I got points with the husband! </p>

<p>Lately I have been trying to like vegetables more and more. I have a few problems. Number one, I don’t like vegetables. Number two, I have no idea how to cook them. I figured problem two would be a lot easier to solve than number one. Google told me that roasting vegetables is probably the quickest way. It would make some caramelized which I’m thinking will cover the gross veggie taste. I went through my recipe box to try to find a healthy recipe, one that wasn’t covered in cheese. <img src='http://s2.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
<p>I found one that said it would work with any vegetable, so I figured I would give it a try. I choose potatoes because lets face it… even bad potatoes are good potatoes.</p>
<ul>
<li>1/8 cup olive oil</li>
<li>1 tablespoon minced garlic</li>
<li>1/2 teaspoon dried basal</li>
<li>1/2 teaspoon dried marjoram</li>
<li>1/2 teaspoon dried dill weed</li>
<li>1/2 teaspoon dried thyme</li>
<li>1/2 teaspoon dried oregano</li>
<li>1/2 teaspoon dried parsley</li>
<li>1/2 teaspoon crushed red pepper flakes</li>
<li>1/2 teaspoon salt</li>
<li>4 large potatoes, peeled and cubed (you can use any vegetable)</li>
</ul>
<ol>
<li>Preheat over to 475 degrees F</li>
<li>In a large bowl, combine all ingredients except potatoes. Mix well. Add potatoes until evenly coated. Place in a single layer on a roasting pan or baking sheet</li>
<li>Roast for twenty to thirty minutes in the preheated oven, turning occasionally to brown on all sides.</li>
</ol>
<p>These were great! Honestly I have never cooked with marjoram or dill weed, so it gave me a chance to cook with something new. The husband said that these were like grown up tator tots. We will definitely be having them again and soon. I hope that its just as tasty when we try it with cauliflower next week.&#160;&#160; </p>

			<content:encoded><![CDATA[<p>A <a href="http://erinstartsliving.wordpress.com/2009/12/15/next-seasons-biggest-loser-winner/">while</a> ago I posted how a friend of a friend is on this seasons biggest loser. For those of you that watch the show and saw the preview for next week, they are going home for a week. When this episode was shot it was actually the week of Christmas. I was able to go to Daris’ coming home party, so I might be on the Biggest Loser next week. So, if anyone reads my blog that watches the biggest loser, look for a girl with glasses, shoulder length dark hair wearing a black shirt. We were all standing in chairs and towards the end some girls moved next to me with a sign that says “Daris is brining sexy back”. I was a little intoxicated and having a horrible day, so I’m hoping that if I am on I don&#8217;t look super pissed! <img src='http://s2.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  </p>

<p>An ex coworker gave me this recipe and its definitely a winner! No picture because I may or may not have stepped away from the stove to watch Biggest Loser. No one wants to see burnt fish. It tasted good, but the looks weren’t this dishes strong point. </p>

			<content:encoded><![CDATA[<p>&#160; The husband and I both love breakfast food. I&#8217;m pretty sure that I would be able to eat breakfast food every meal if I had to. Lately, we have been a little tired of all of our breakfast recipes, so I started the search for some new ones. I wanted a recipe that I could make for breakfast and also for brunch. Whenever I found this recipe, I knew that I wanted to try them asap.</p>
<p>Marshmallow Delights from <a href="http://allrecipes.com/Recipe/Marshmallow-Delights/Detail.aspx">All Recipes</a></p>
<p>1 (8 ounce) package refrigerated crescent rolls    <br />1/4 cup sugar     <br />1 tablespoon ground cinnamon     <br />8 large marshmallows     <br />1/4 cup butter, melted     <br /><a href="http://allrecipes.com/Recipe/Marshmallow-Delights/SaveToRecipeBox.ashx">     <br /></a>Separate rolls into eight triangles. Combine sugar and cinnamon. Dip each marshmallow into butter, roll in cinnamon-sugar and place on a triangle. Pinch dough around marshmallow, sealing all edges. Dip tops of dough into remaining butter and cinnamon-sugar. Place with sugar side up in greased muffin cups. Bake at 375 degrees&#160; for 13 to 15 minutes. Serve warm. </p>
<p>Most of the reviews said that Marshmallow Delights resembled cinnamon rolls except that the icing was in the middle. I wish I knew if this were true. You see in the recipe where it says to make sure to seal the crescent rolls well. I thought that I did an exceptional job in the sealing department, but I was wrong. So if you think you sealed them well, go ahead and seal them again! My rolls exploded, releasing marshmallow everywhere. The next time I make these I will definitely put a large cookie sheet underneath them just in case. </p>

<p>Despite my fail, they turned out really well!&#160; I will definitely be making them again. It&#8217;s recipes like this that make me happy that I tried them before an event because I would not want to serve my fail rolls to anyone besides close family. You can tell from the pictures, it wasn&#8217;t pretty but they were yummy. </p>

<p>I will be the first person to tell you that I spoil Sassy to death. I treat her like my child, talk to her, take her for trips, everything. Except dress her in clothes. When we first got her, the husband said I can only dress her at Halloween and during football games in an OU jersey. Anyone that meets her can tell that she is our child&#8230; she even lets me hold her like a baby sometimes (this is pathetic, I understand). I have been wanting to make her some doggie treats for a while, but almost all of them have one ingredient that I don&#8217;t have at home. This is a combination of recipes according to what I had on hand.</p>
<ul>
<li>2 medium bananas, mashed</li>
<li>1 1/4 cup whole wheat flour</li>
<li>1/4 cup flour</li>
<li>3/4 cup quick oats</li>
<li>1 tsp honey</li>
<li>1/2 tablespoon peanut butter</li>
<li>1 egg</li>
<li>pinch of salt</li>
</ul>
<p>Preheat the oven to 350</p>
<p>Mix all of the ingredients into a small bowl and mix well. Measure a teaspoon of dough and roll into a ball. Place dough balls onto a baking sheet. Press down with a fork using a criss cross pattern. Bake for twenty minutes. Cool completely before letting your little one dig in.</p>
<p>Sassy loved these! She is so weird sometimes, she takes her food away for a while before eating it. I took some to my parents and my older sister and all of their dogs love them as well. Sassy now knows where her &quot;cookies&quot; are and actually understands the word cookie. I guess I&#8217;m going to be forced to keep making them.</p>

<p>I didn’t use an Oreo pie crust, instead we used a graham cracker crust. We prefer graham cracker to chocolate. Even though we used all the pudding and whipped topping, it fill all the way up to the top. Then I realized that we had an extra large crust that had two extra servings. oops!&#160; I also didn’t drizzle it with chocolate because I forgot. </p>

			<content:encoded><![CDATA[<p>So I&#8217;m playing catch up from my pneumonia days. I read a total of four books while I was sick, but never got around to posting them. Yay for unemployment giving me lots of time!</p>
<p>Bitter is the New Black</p>
<p>This book is an autobiography written by the very witty Jen Lancaster. I think when you read the full title you get a pretty good picture of what the book is going to be about: Bitter is the New Black : Confessions of a Condescending, Egomaniacal, Self-Centered Smartass, Or, Why You Should Never Carry A Prada Bag to the Unemployment Office. I want to preface that I read this book over three weeks ago (almost a month) and I never thought that I would be able to relate to it. Now being unemployed, I want to go back and reread all the fine details. I think that I would definitely be able to appreciate the book more now then I did when I was earning a paycheck.</p>
<p>There are a ton of reasons why I shouldn&#8217;t like this book. Most of them dealing with the author.</p>
<p>I couldn&#8217;t relate to her.</p>
<p>She is rude as hell. </p>
<p>She seems like a stuck up snob. </p>
<p>She has no self control when it comes to shoes, money or looking good. </p>
<p>She speaks without thinking of how her thoughts will affect others.</p>
<p>With all that being said, I love her. The book was H-I-L-A-R-I-O-U-S! I literally laughed out loud numerous times. I loved the relationship that she had with her husband (she had her own &quot;Jen Commandments&quot;). I loved that she rescued some dogs that she initially thought was ugly but grew to love. Totally not my style, but if I were going to be a bitch, I would want to be just like her. After she loses her job, you really start to root for her. </p>
<p>Because I suck at summaries of books and actually posting them, I think I’m going to start posting my favorite quotes from the book. I feel like my summaries are book reports. I hated book reports in the seventh grade and I still do. </p>
<p>&quot;You want to change? Lose the bitch. Be nicer to people. Stop telling them to &quot;bite you&quot; and threatening to kick them until they&#8217;re dead.&quot; </p>
<p> &quot;I still believe in the Holy Trinity, except now it&#8217;s Target, Trader Joe&#8217;s, and IKEA.&quot; </p>
<p>&quot;I don&#8217;t mean to get all religious here, but I&#8217;m pretty sure key lime martinis (with a graham cracker &amp; sugar rim) are proof that Jesus loves us.&quot; </p>

However, this recipe looked pretty good so I decided to give it a try. I love anything that resembles a chocolate chip cookie.</p>
<p><b>Chocolate Chip Cookie Pie</b></p>
<ul>
<li>2 eggs</li>
<li>1/2 cup flour</li>
<li>1/2 cup sugar</li>
<li>1/2 cup packed brown sugar</li>
<li>1 cup butter, melted and cooled to room temperature</li>
<li>1 cup chocolate chips</li>
<li>1 unbaked pie shell</li>
<li>whipped cream or ice cream</li>
<p> Preheat oven to 325. In large bowl, beat eggs until foamy. Beat in flour, sugar and brown sugar until well blended. Blend in melted butter. Stir in chocolate chips. Pour into pie shell. Bake for 60 minutes.Serve warm with ice cream.</ul>
<p>This turned out really well, but it still didn’t convince me that pies are amazing. I think that serving it warm with the ice cream is what really made it. Mine turned out a little funny because I didn’t let my better completely cool back to room temperature. My mom told me that if I don&#8217;t let the better cool back to room temperature, then it will melt the chocolate chips a little and they will sink to the bottom. To bad she didn’t tell me that before I made the pie! Oh well. <img src='http://s2.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>
